Mix Veg (Includes Paneer)

Ingredients

  • 50 gm of Paneer
  • ½  Carrot
  • 50gm Cauliflower
  • 3 tsp of Green Peas
  • ½ Capsicum
  • 4 – 5 French beans
  • 1 Tomato
  • Salt to taste
  • 1 Onion
  • 1 tsp of Ginger Garlic Paste
  • 2 Green Chilies
  • ¼ tsp Mustard seeds
  • ¼ tsp Cumin seeds
  • ¼ tsp Red Chili Powder
  • ¼ tsp of Coriander Powder
  • ¼ tsp of Garam Masala
  • 1 Clove
  • 1 Bay leaf
  • 1 small piece of Cinnamon

Instructions

  • Heat some oil in a pan and add 3 – 4 cubes of Paneer in it. Keep them aside once they turn golden – brownish in colour.
  • In the same pan add diced carrots, cauliflower, beans, Green Peas, capsicum and saute them well till they are half cooked. Once they are cooked transfer them into a plate and keep them aside
  • In pan add bay leaf, cummin seeds, Kasturi methi, Green Chilli. Once they are stirred well add finely chopped onions to it
  • Next add Ginger – Garlic pastes, Turmeric, Red Chili Powder, coriander masala, garam masala, salt to it
  • In a blender jar add roughly chopped tomatoes, cinnamon, cloves, cardamom to it. Blend it in smooth paste
  • Add the blended paste in the pan, and combine it all together very well
  • Cover the pan with the lid and cook it well for 5 – 7 minutes
  • Once the oil is oozing out from the mixture, add curd to the curry and mix well
  • Once the curry is cooked completely add all the stir fry veggies to it
  • Add water if required to match the consistency, cover it with lid and let it boil for 1 – 2 minutes
  • Sprinkle fresh coriander leaves and crushed Kasturi methi over it for garnishing
  • Serve Hot!!!
